Zesty Chicken Breast(s) Serves 1 or more…
Note: I did this with just one chicken breast, but it’s easily multiplied!
Boneless, skinless chicken breast(s)
Buttermilk to cover
Kosher salt
Hot sauce
Panko bread crumbs
Canola oil
Combine enough buttermilk to cover the chicken in a shallow dish with a generous amount of kosher salt…think brine…and hot sauce to taste (I used Cholula, about a tablespoon or so).
Add raw chicken to the mix, let sit 30-60 minutes.
Put a generous ½ C or so of Panko bread crumbs in a shallow dish or plate.
Remove chicken from marinade, allow excess to drip off a bit, then coat thoroughly with the Panko.
Meanwhile, heat a couple tablespoons of oil in a frying pan, get it good and hot (test by dropping a couple bread crumbs, they should turn golden easily without burning)
Add chicken to pan, cook over medium high heat until golden on one side, turn and continue cooking until golden on second side and chicken is just cooked thru…about 8 minutes total cooking time.
Drain briefly on paper towels, serve.
